Description

A deliciously marinated skirt steak, grilled to perfection, ideal for tacos or salads.


Ingredients

  • 2 lbs skirt steak
  • 2 tsp paprika
  • 1 tsp cumin
  • 4 cloves garlic, minced
  • Juice of 2 limes or lemons
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup olive oil

Instructions

  1. In a bowl, mix spices, garlic, citrus juice, salt, pepper, and olive oil to create the marinade.
  2. Place the skirt steak in the marinade and refrigerate for at least 1 hour or overnight.
  3. Preheat your grill or cast iron skillet over medium-high heat.
  4. Remove the steak from the marinade and discard the excess marinade.
  5. Grill or sear the steak for about 4-5 minutes on each side for medium-rare, adjusting time for desired doneness.
  6. Let the steak rest for a few minutes, then slice against the grain.
  7. Serve as a main dish, in tacos, or over a salad, pairing with chimichurri or roasted veggies.
