Instructions
- Slice the mini sweet peppers in half lengthwise and carefully remove any seeds.
- Arrange the pepper halves cut-side up on a serving platter or sheet pan.
- Mix the fat-free feta cheese with the two light Laughing Cow cheddar cheese wedges in a small bowl.
- Microwave the cheese mixture for 30 seconds to soften it.
- Add everything bagel seasoning and chili crunch, mixing until well combined.
- Fill each pepper half generously with the cheese mixture using a spoon.
- Serve immediately for the best flavor and texture, garnished with chopped green onions or herbs if desired.
