A warm and hearty cheeseburger soup that brings comfort and flavor to the table.
Ingredients

- 1 pound ground beef
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 (14.5-ounce) can diced tomatoes, undrained
- 1 (4-ounce) can diced green chilies, undrained
- 1 teaspoon dried Italian seasoning
- ½ teaspoon salt (or to taste)
- ¼ teaspoon black pepper (or to taste)
- 4 cups peeled and cubed potatoes (about 2 large potatoes)
- 1 cup shredded carrots
- 4 ounces cream cheese, softened
- 1 cup milk
- 2 cups shredded cheddar cheese (plus more for topping)
Instructions
- In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain excess grease.
- Add chopped onion and cook until softened, about 5-7 minutes. Stir in minced garlic and cook for another minute.
- Pour in beef broth, diced tomatoes, and green chilies; stir in Italian seasoning, salt, and pepper.
- Add cubed potatoes and shredded carrots, bring to a boil, then reduce heat and let simmer for 15-20 minutes until potatoes are tender.
- Remove from heat and stir in cream cheese until smooth, then add milk and shredded cheddar cheese until melted.
- Ladle into bowls, garnish with extra cheese, bacon crumbles, sour cream, and green onions as desired. Serve hot.
Notes
For a spicier kick, add jalapeños during cooking or top with spicy peppers. Store leftovers in airtight containers.
