Ingredients

Scale
  • 454 g ground beef
  • 2 cans (283 g each) red enchilada sauce
  • 227 g shredded Mexican blend cheese
  • 227 g shredded cheddar cheese
  • 12 flour tortillas (6 inch, 15 cm)

Instructions

  2. Mix in 3/4 cup of the enchilada sauce and 1 cup of the shredded cheese into the cooked beef.
  3. Distribute the beef mixture onto the tortillas, roll them up, and lay them seam-side down in a baking dish that has been lightly coated with oil or cooking spray.
  4. Drizzle the rest of the enchilada sauce over the rolled tortillas. Sprinkle the remaining cheese on top.
  5. Place in the oven and bake for 15 to 20 minutes, or until the cheese is fully melted.
  6. Accompany with yellow rice and refried beans when serving.
  7. Add a topping of sour cream, salsa, and lettuce for garnish.

Notes

  • Consider using lean ground beef or turkey for a healthier option and reduced fat content. Experiment with different cheeses like pepper jack or mozzarella for a unique flavor twist. Make the enchiladas spicier by adding diced jalapeños or green chilies to the beef mixture.
