Ingredients

  • 4 cups diced potatoes
  • 1 onion, chopped
  • 2 cups beef broth
  • 1 cup milk
  • 2 cups shredded cheese (cheddar or your choice)
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Optional toppings: green onions, additional cheese

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and ground beef, cooking until the beef is browned. Drain excess fat.
  3. Stir in diced potatoes, beef broth, garlic powder, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20-25 minutes or until potatoes are tender.
  4. Add the milk and shredded cheese to the pot, stirring until the cheese is melted and the soup is creamy.
  5. Taste and adjust seasoning if needed.
  6. Serve hot, topped with green onions and additional cheese if desired.

Notes
