- 4 cups diced potatoes
- 1 onion, chopped
- 2 cups beef broth
- 1 cup milk
- 2 cups shredded cheese (cheddar or your choice)
- 1 tsp garlic powder
- Salt and pepper to taste
- 2 tbsp olive oil
- Optional toppings: green onions, additional cheese
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and ground beef, cooking until the beef is browned. Drain excess fat.
- Stir in diced potatoes, beef broth, garlic powder, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20-25 minutes or until potatoes are tender.
- Add the milk and shredded cheese to the pot, stirring until the cheese is melted and the soup is creamy.
- Taste and adjust seasoning if needed.
- Serve hot, topped with green onions and additional cheese if desired.
Notes
For a thicker consistency, blend a portion of the soup and mix it back in. Experiment with different cheeses or add vegetables for variation.
