Ingredients

  • 1 lb smoked sausage (sliced)
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1 bell pepper (diced)
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 1 tsp paprika
  • Salt & pepper to taste

Instructions

  1. Brown the sausage in a large skillet over medium heat. Once golden and fragrant, remove and set aside.
  2. In the same skillet, sauté the diced onions, minced garlic, and diced bell peppers until soft and slightly translucent.
  3. Add the rice, broth, paprika, salt, and pepper into the skillet. Bring to a boil, then reduce the heat, cover the skillet, and let it simmer for 15 minutes until the rice absorbs the liquid.
  4. Stir in the cooked sausage and shredded cheddar cheese until melted and well combined. Garnish with parsley if desired and serve hot.

Notes

For extra flavor, consider adding herbs like thyme or basil, or a hint of cayenne pepper for some heat.
