Description

A comforting skillet dish with smoked sausage, cheesy rice, and fresh vegetables, ready in just 30 minutes.


Ingredients

  • 1 lb smoked sausage (sliced)
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1 bell pepper (diced)
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 1 tsp paprika
  • Salt & pepper to taste

Instructions

  1. In a large skillet, brown the sliced sausage over medium heat until it gets some nice color, then set aside.
  2. Add the diced onions, minced garlic, and diced bell peppers to the skillet and sauté until softened and fragrant.
  3. Add the long-grain white rice, chicken broth, paprika, salt, and pepper to the skillet; bring to a boil.
  4. Once boiling, reduce heat, cover, and simmer for 15 minutes until the rice absorbs the broth.
  5. Stir in the cooked sausage and shredded cheddar cheese until melted and creamy.
  6. Garnish with parsley and serve hot.
