Ingredients

- 1 lb smoked sausage (sliced)
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 cup shredded cheddar cheese
- 1 bell pepper (diced)
- 1 small onion (diced)
- 2 cloves garlic (minced)
- 1 tsp paprika
- Salt & pepper to taste
Instructions
- In a large skillet, brown the sliced sausage over medium heat until it gets some nice color, then set aside.
- Add the diced onions, minced garlic, and diced bell peppers to the skillet and sauté until softened and fragrant.
- Add the long-grain white rice, chicken broth, paprika, salt, and pepper to the skillet; bring to a boil.
- Once boiling, reduce heat, cover, and simmer for 15 minutes until the rice absorbs the broth.
- Stir in the cooked sausage and shredded cheddar cheese until melted and creamy.
- Garnish with parsley and serve hot.
