- 1 scoop protein powder
- 1/2 cup Greek yogurt
- 1/2 teaspoon cinnamon
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 eggs
- 1/4 cup honey or maple syrup
- 1/4 cup milk (or dairy-free alternative)
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
- In a mixing bowl, combine oats, protein powder, baking powder, cinnamon, and salt.
- In another bowl, whisk together eggs, Greek yogurt, honey (or maple syrup), and milk until smooth.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fill the muffin tins about 3/4 full with the batter.
- Bake in the preheated oven for 18-20 minutes or until a toothpick comes out clean.
- Let cool for a few minutes before transferring to a wire rack. Enjoy!
