- 1/2 small banana (ripe or overripe)
- 1/4 tsp baking powder
- 1/4 tsp cinnamon
- 1/4 cup + 1 tbsp unsweetened vanilla almond milk
- 1 tsp pure maple syrup
- 1/2 tbsp creamy almond butter
- 3/4 tsp unsweetened vanilla almond milk
- 1/2 tsp pure maple syrup
- 1/8 tsp cinnamon
Instructions
- Preheat the oven to 350°F.
- Add all oatmeal batter ingredients—quick oats, banana, baking powder, cinnamon, nut milk, maple syrup, and almond butter—to your high-speed blender or food processor.
- Blend for a few minutes until you achieve a smooth oatmeal batter consistency.
- Pour the oatmeal batter into an oven-safe ramekin.
- In a small bowl, combine the maple syrup and cinnamon for the swirl topping.
- Spoon the cinnamon swirl mixture onto your oatmeal batter in a spiral shape.
- Bake the oatmeal for about 20–25 minutes, or until you reach your desired consistency.
- Let the oatmeal cool for a bit, then top it off with vegan vanilla icing if desired.
- Dig in and enjoy!
Notes
Start with a very ripe banana for added sweetness. You can substitute almond butter with another nut butter or sunflower seed butter for a nut-free option.
