Ingredients

  • 1/4 tsp baking powder
  • 1/4 tsp cinnamon
  • 1/4 cup + 1 tbsp unsweetened vanilla almond milk
  • 1 tsp pure maple syrup
  • 1/2 tbsp creamy almond butter
  • 3/4 tsp unsweetened vanilla almond milk
  • 1/2 tsp pure maple syrup
  • 1/8 tsp cinnamon

Instructions

  1. Preheat the oven to 350°F.
  2. Add all oatmeal batter ingredients—quick oats, banana, baking powder, cinnamon, nut milk, maple syrup, and almond butter—to your high-speed blender or food processor.
  3. Blend for a few minutes until you achieve a smooth oatmeal batter consistency.
  4. Pour the oatmeal batter into an oven-safe ramekin.
  5. In a small bowl, combine the maple syrup and cinnamon for the swirl topping.
  6. Spoon the cinnamon swirl mixture onto your oatmeal batter in a spiral shape.
  7. Bake the oatmeal for about 20–25 minutes, or until you reach your desired consistency.
  8. Let the oatmeal cool for a bit, then top it off with vegan vanilla icing if desired.
  9. Dig in and enjoy!

Notes

Start with a very ripe banana for added sweetness. You can substitute almond butter with another nut butter or sunflower seed butter for a nut-free option.
