Ingredients

  • 1 1/4 cups all-purpose flour
  • 1 cup sugar
  • 2/3 cup light brown sugar
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 5 tablespoons unsalted butter (melted)
  • 1/2 cup (1 stick) unsalted butter (melted)
  • 2 large eggs
  • 1/2 cup full-fat sour cream
  • 1 teaspoon vanilla extract
  • For the Streusel Topping: 1/2 cup all-purpose flour, 1/2 cup sugar, 5 tablespoons unsalted butter (melted)

Instructions

  1. Preheat your oven to 375°F (190°C). Line your muffin tin with paper liners or grease it lightly.
  2. In a mixing bowl, combine 1 1/4 cups of all-purpose flour, sugar, brown sugar, baking powder, baking soda, salt, and 1 tablespoon of ground cinnamon. Mix them well.
  3. In a separate bowl, whisk together 5 tablespoons of melted butter, 2 large eggs, 1/2 cup of sour cream, and 1 teaspoon of vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix; a few lumps are fine.
  5. Prepare the streusel topping by mixing 1/2 cup of flour, 1/2 cup of sugar, and 5 tablespoons of melted butter together until crumbly.
  6. Spoon the muffin batter into the prepared tin, filling each liner about two-thirds full. Top each muffin with a tablespoon of streusel topping.
  7. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Remove from the oven and allow to cool slightly before transferring to a wire rack.

Notes

Use room temperature ingredients for better mixing. Consider adding fruits or nuts for variation.
