- – 1 ½ cups (180 g) flour
- – 1 teaspoon (5 ml) baking soda
- – 1/2 teaspoon (3 ml) cinnamon
- – 1/4 teaspoon (1 ml) salt
- – 1/4 teaspoon (1 ml) baking powder
- – ¼ cup (50 g) sugar
- – 1 tablespoon (15 ml) cinnamon
Instructions
- Set your oven to 350°F. Prepare an 8-inch loaf pan by lining it with nonstick foil and applying cooking spray. In a big bowl, thoroughly mix the zucchini, sugar, vegetable oil, vanilla extract, and eggs. In another, smaller bowl, blend the flour, baking soda, cinnamon, salt, and baking powder with a whisk. Gradually combine the dry mixture into the zucchini blend until everything is well-integrated. For the cinnamon swirl, stir together the cinnamon and sugar in a separate small bowl. Pour one-third of the batter into the loaf pan. Sprinkle half of the cinnamon-sugar mixture over it. Add another third of the batter, followed by the rest of the cinnamon-sugar. Finish with the remaining batter on top. Place the pan in the oven and bake for 35 to 45 minutes, or until a toothpick inserted into the center comes out clean. Depending on factors like altitude, humidity, and oven calibration, you may need to extend the baking time. Check every 5 minutes after the initial 35 minutes with a toothpick to ensure it’s done.
