Description

A comforting bowl of Easy Creamy Lasagna Soup that combines traditional flavors with simplicity, perfect for busy weeknights.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion (finely diced)
  • 1 pound ground beef (80/20)
  • 5 cloves garlic (minced)
  • ½ teaspoon red pepper flakes
  • 1 teaspoon dried oregano
  • 2 tablespoons tomato paste
  • 25 ounces tomato basil pasta sauce
  • 28 ounces diced canned tomatoes
  • 4 cups chicken broth (more if you want a thinner soup)
  • 2 teaspoons kosher salt (divided or more to taste)
  • 12 lasagna noodles (uncooked and broken into 2″ pieces)
  • ½ cup heavy cream (optional)
  • 1 cup shredded mozzarella cheese
  • ½ cup parmesan cheese (freshly grated)
  • ½ cup ricotta cheese
  • 6 tablespoons fresh basil (finely chopped)

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion and sauté until soft, about 5 minutes.
  2. Add the ground beef to the pot. Cook until browned all over, breaking it up with a spoon as it cooks.
  3. Stir in the minced garlic, red pepper flakes, 1 teaspoon of kosher salt, dried oregano, and tomato paste. Sauté for an additional minute to release the flavors.
  4. Blend in the tomato basil pasta sauce, diced canned tomatoes, and chicken broth. Bring the mixture to a gentle boil.
  5. Add the broken lasagna noodles and the remaining 1 teaspoon of kosher salt. Stir well and reduce the heat to a simmer. Cook until the noodles are tender, approximately 10-15 minutes.
  6. If you prefer a creamier texture, stir in heavy cream. For a thinner soup, feel free to add an extra cup or two of chicken broth.
  7. For added creaminess, mix some shredded mozzarella or parmesan directly into the soup.
  8. Spoon servings into bowls, and top with dollops of ricotta cheese, additional mozzarella and parmesan, and a sprinkle of fresh basil. Serve immediately.

Notes

For a vegetarian version, omit the ground beef and replace it with mushrooms or your favorite plant-based protein. Use fresh herbs when available for enhanced flavor.
