Easy Creamy Spinach Mushroom Lasagna

Description

A comforting and delicious lasagna layered with creamy béchamel, fresh spinach, and earthy mushrooms.


Ingredients

  • 2 tablespoons olive oil
  • 3 cups fresh spinach, roughly chopped
  • 2 cups mushrooms, sliced
  • 3 garlic cloves, minced
  • Salt and pepper, to taste
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 3 cups warm milk
  • ½ teaspoon ground nutmeg
  • 9 lasagna noodles (no-boil or pre-cooked)
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 cup ricotta cheese

Instructions

  1. Heat olive oil in a skillet over medium heat. Add sliced mushrooms and sauté until softened and lightly golden.
  2. Add chopped spinach and minced garlic, and cook until spinach wilts. Season with salt and pepper, then remove from heat.
  3. Melt butter in a saucepan over medium heat. Stir in flour and cook for 1-2 minutes to make a paste.
  4. Gradually whisk in warm milk, stirring until sauce thickens. Season béchamel with nutmeg, salt, and pepper; remove from heat.
  5. Spread a thin layer of béchamel sauce in a 9×13-inch baking dish. Layer 3 lasagna noodles over the sauce.
  6. Top with one-third of the vegetable filling, dollops of ricotta cheese, a sprinkle of mozzarella, and a spoonful of béchamel sauce.
  7. Repeat layers twice more, finishing with béchamel and remaining mozzarella and Parmesan cheese on top.
  8. Cover with aluminum foil and bake at 375°F (190°C) for 25 minutes. Remove foil and bake for an additional 15 minutes until cheese is bubbly and golden.
  9. Allow to rest for 10 minutes before slicing. Serve and enjoy!

Notes

Experiment with additional vegetables like zucchini or bell peppers. Broil for 2-3 minutes for a crispy cheese finish.
