A comforting and delicious lasagna layered with creamy béchamel, fresh spinach, and earthy mushrooms.
Ingredients

- 2 tablespoons olive oil
- 3 cups fresh spinach, roughly chopped
- 2 cups mushrooms, sliced
- 3 garlic cloves, minced
- Salt and pepper, to taste
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 3 cups warm milk
- ½ teaspoon ground nutmeg
- 9 lasagna noodles (no-boil or pre-cooked)
- 2 cups shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 1 cup ricotta cheese
Instructions
- Heat olive oil in a skillet over medium heat. Add sliced mushrooms and sauté until softened and lightly golden.
- Add chopped spinach and minced garlic, and cook until spinach wilts. Season with salt and pepper, then remove from heat.
- Melt butter in a saucepan over medium heat. Stir in flour and cook for 1-2 minutes to make a paste.
- Gradually whisk in warm milk, stirring until sauce thickens. Season béchamel with nutmeg, salt, and pepper; remove from heat.
- Spread a thin layer of béchamel sauce in a 9×13-inch baking dish. Layer 3 lasagna noodles over the sauce.
- Top with one-third of the vegetable filling, dollops of ricotta cheese, a sprinkle of mozzarella, and a spoonful of béchamel sauce.
- Repeat layers twice more, finishing with béchamel and remaining mozzarella and Parmesan cheese on top.
- Cover with aluminum foil and bake at 375°F (190°C) for 25 minutes. Remove foil and bake for an additional 15 minutes until cheese is bubbly and golden.
- Allow to rest for 10 minutes before slicing. Serve and enjoy!
Notes
Experiment with additional vegetables like zucchini or bell peppers. Broil for 2-3 minutes for a crispy cheese finish.
