- ½ cup (120 ml) unsweetened cocoa powder
- 1 teaspoon (5 ml) baking powder
- ½ teaspoon (2.5 ml) baking soda
- ½ teaspoon (2.5 ml) salt
- 2 large eggs
- 1 cup (240 ml) granulated sugar
- ½ cup (120 ml) milk
- ½ cup (120 ml) vegetable oil
- 2 teaspoons (10 ml) vanilla extract
- 1 ½ cups (360 ml) grated zucchini, squeezed and liquid drained
- 1 ½ cups (360 ml) chocolate chips
Instructions
- Turn on your oven to 375°F and prepare a muffin tin with paper liners.
- In a small bowl, mix the flour, cocoa powder, baking powder, baking soda, and salt.
- In a larger mixing bowl, beat the eggs with the sugar. Add in the milk and vegetable oil, mixing well. Incorporate the vanilla extract.
- Gently combine the dry mixture into the wet ingredients until just blended. Fold in the grated zucchini. Add the chocolate chips and mix.
- Spoon the batter into the lined muffin cups, filling each about three-quarters full. Bake for 18 to 22 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the muffins to cool before enjoying them.
Notes
- Thoroughly drain grated zucchini to remove excess liquid before adding to batter.
- Be gentle when folding in zucchini and chocolate chips to avoid overmixing.
- Consider using dark chocolate chips for a richer chocolate flavor.
