  • 1 medium yellow onion, diced
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 oz onion soup mix
  • 2 cups instant white rice, uncooked
  • 2 cups beef broth
  • 1 cup sour cream
  • 2 cups shredded mozzarella cheese
  • 1 cup crispy fried onions
  • 1 tablespoon fresh chopped parsley (optional topping)

Instructions

  1. Preheat the oven to 350°F.
  2. In a skillet, brown the ground beef and diced onion over medium heat, seasoning with salt and pepper.
  3. Stir in the onion soup mix until blended.
  4. In a large bowl, combine uncooked rice and beef broth, then fold in the sour cream and the beef mixture.
  5. Transfer to a greased casserole dish and top with mozzarella cheese and crispy fried onions.
  6. Cover with foil and bake for 30 minutes, then remove foil and bake for an additional 10-15 minutes until cheese is golden.
  7. Let cool for a few minutes before serving.
