- 1 lb lean ground beef
- 1 medium yellow onion, diced
- ½ teaspoon salt
- ½ teaspoon pepper
- 1 oz onion soup mix
- 2 cups instant white rice, uncooked
- 2 cups beef broth
- 1 cup sour cream
- 2 cups shredded mozzarella cheese
- 1 cup crispy fried onions
- 1 tablespoon fresh chopped parsley (optional topping)
Instructions
- Preheat the oven to 350°F.
- In a skillet, brown the ground beef and diced onion over medium heat, seasoning with salt and pepper.
- Stir in the onion soup mix until blended.
- In a large bowl, combine uncooked rice and beef broth, then fold in the sour cream and the beef mixture.
- Transfer to a greased casserole dish and top with mozzarella cheese and crispy fried onions.
- Cover with foil and bake for 30 minutes, then remove foil and bake for an additional 10-15 minutes until cheese is golden.
- Let cool for a few minutes before serving.
Notes
For extra flavor, consider adding sautéed mushrooms or bell peppers. Adjust seasoning to taste before baking.
