- 200g halloumi cheese, diced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 red onion, thinly sliced
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
- Fresh herbs (basil or parsley) for garnish
Instructions
- Cook the pasta according to package instructions. Drain and set aside to cool.
- In a pan, heat olive oil over medium heat and fry the diced halloumi until golden brown on all sides.
- In a large bowl, combine the cooled pasta, halloumi, cherry tomatoes, cucumber, bell pepper, and red onion.
- In a small bowl, mix olive oil, lemon juice, salt, and pepper to create a dressing.
- Pour the dressing over the salad and toss gently to combine.
- Garnish with fresh herbs and serve chilled or at room temperature.
