Ingredients

  • 200g halloumi cheese, diced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 red onion, thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • Fresh herbs (basil or parsley) for garnish

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside to cool.
  2. In a pan, heat olive oil over medium heat and fry the diced halloumi until golden brown on all sides.
  3. In a large bowl, combine the cooled pasta, halloumi, cherry tomatoes, cucumber, bell pepper, and red onion.
  4. In a small bowl, mix olive oil, lemon juice, salt, and pepper to create a dressing.
  5. Pour the dressing over the salad and toss gently to combine.
  6. Garnish with fresh herbs and serve chilled or at room temperature.
