Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 4 to 5 garlic cloves, minced
  • 1 jar (28–32 oz) pasta or spaghetti sauce
  • 1 can (14 oz) diced tomatoes
  • 2 tbsp tomato paste
  • 1 tbsp dried basil
  • 1 tbsp dried oregano
  • 1 tbsp dried parsley
  • 1 bay leaf
  • 4 to 6 cups chicken stock
  • 8 lasagna noodles, broken into small pieces
  • 1/2 cup heavy cream
  • 1 cup shredded mozzarella cheese

Instructions

  1. Brown the ground beef in a large pot over medium heat. Drain excess fat.
  2. Add the diced onions and minced garlic. Sauté until onions are translucent (about 3–4 minutes).
  3. Stir in the pasta sauce, diced tomatoes, and tomato paste.
  4. Add dried basil, oregano, parsley, and bay leaf.
  5. Pour in chicken stock and bring to a gentle boil.
  6. Reduce heat and let the soup simmer for about 15 minutes.
  7. Stir in broken lasagna noodles and cook until tender.
  8. Add heavy cream and stir until combined.
  9. Mix in shredded mozzarella cheese until melted.
  10. Serve hot, topped with extra mozzarella cheese and parsley if desired.

Notes

For extra nutrition, consider adding spinach or bell peppers. Pair with garlic bread for a complete meal.
