A comforting and easy lasagna soup made without ricotta, perfect for cozy family dinners.

- 1 lb ground beef
- 1 medium onion, diced
- 4 to 5 garlic cloves, minced
- 1 jar (28–32 oz) pasta or spaghetti sauce
- 1 can (14 oz) diced tomatoes
- 2 tbsp tomato paste
- 1 tbsp dried basil
- 1 tbsp dried oregano
- 1 tbsp dried parsley
- 1 bay leaf
- 4 to 6 cups chicken stock
- 8 lasagna noodles, broken into small pieces
- 1/2 cup heavy cream
- 1 cup shredded mozzarella cheese
Instructions
- Brown the ground beef in a large pot over medium heat. Drain excess fat.
- Add the diced onions and minced garlic. Sauté until onions are translucent (about 3–4 minutes).
- Stir in the pasta sauce, diced tomatoes, and tomato paste.
- Add dried basil, oregano, parsley, and bay leaf.
- Pour in chicken stock and bring to a gentle boil.
- Reduce heat and let the soup simmer for about 15 minutes.
- Stir in broken lasagna noodles and cook until tender.
- Add heavy cream and stir until combined.
- Mix in shredded mozzarella cheese until melted.
- Serve hot, topped with extra mozzarella cheese and parsley if desired.
Notes
For extra nutrition, consider adding spinach or bell peppers. Pair with garlic bread for a complete meal.
