Description

A refreshing and flavorful chicken salad with zesty lemon and fragrant basil, perfect for lunch or dinner.

Ingredients

Scale
  • 2 cups shredded chicken (store-bought or homemade)
  • ¼ cup red onion, finely diced
  • 12 celery stalks, finely diced
  • ¼ cup mayonnaise
  • ¼ cup plain Greek yogurt
  • 1 cup fresh basil, chopped
  • 2 Tbsp lemon juice
  • 1 Tbsp lemon zest
  • 1 garlic clove, minced
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Prep the salad by adding the shredded chicken, onion, and celery to a large bowl, then set aside.
  2. Make the dressing by combining the mayonnaise, Greek yogurt, chopped basil, lemon juice, lemon zest, minced garlic, salt, and black pepper in a small bowl. Mix until smooth and creamy.
  3. Toss the dressing over the chicken and veggies, mixing until fully combined. Taste and adjust the salt and pepper as needed.
  4. Serve immediately alongside crackers or as a filling for sandwiches. Alternatively, keep the chicken salad chilled in the refrigerator until ready to use.

Notes

Chill your ingredients for better flavor integration and let the salad sit for 30 minutes before serving for the best taste.
