Ingredients

  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  3. Add garlic and sauté for an additional minute.
  4. Stir in the rinsed lentils, diced potatoes, vegetable broth, thyme, and bay leaf.
  5. Bring to a boil, then reduce heat and let simmer for 25-30 minutes.
  6. Stir occasionally until lentils and potatoes are tender.
  7. Remove bay leaf, season with salt and pepper to taste, and serve hot.
