Ingredients

- 2 medium potatoes, diced
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- In a large pot, heat olive oil over medium heat.
- Add onion, carrots, and celery; sauté until soft.
- Add garlic and sauté for an additional minute.
- Stir in the rinsed lentils, diced potatoes, vegetable broth, thyme, and bay leaf.
- Bring to a boil, then reduce heat and let simmer for 25-30 minutes.
- Stir occasionally until lentils and potatoes are tender.
- Remove bay leaf, season with salt and pepper to taste, and serve hot.
Notes
For added texture, consider blending a portion of the soup. Fresh herbs like parsley can enhance flavor.
