Description

A comforting and hearty loaded potato soup featuring cheddar cheese, bacon, and fresh green onions.


Ingredients

  • 4 large potatoes, peeled and diced
  • 4 cups chicken or vegetable broth
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup green onions, chopped
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt butter over medium heat.
  2. Add diced potatoes and broth. Bring to a boil, then reduce heat and simmer for about 15 minutes or until potatoes are tender.
  3. Mash some of the potatoes in the pot for a thicker texture.
  4. Stir in milk and cheddar cheese, and heat until cheese is melted.
  5. Add crumbled bacon, salt, and pepper to taste.
  6. Serve hot, garnished with green onions.

Notes

For an extra creamy texture, use an immersion blender to purée part of the soup. Adjust seasoning to taste.
