A comforting and hearty loaded potato soup featuring cheddar cheese, bacon, and fresh green onions.
Ingredients

- 4 large potatoes, peeled and diced
- 4 cups chicken or vegetable broth
- 1 cup milk
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1/4 cup green onions, chopped
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- In a large pot, melt butter over medium heat.
- Add diced potatoes and broth. Bring to a boil, then reduce heat and simmer for about 15 minutes or until potatoes are tender.
- Mash some of the potatoes in the pot for a thicker texture.
- Stir in milk and cheddar cheese, and heat until cheese is melted.
- Add crumbled bacon, salt, and pepper to taste.
- Serve hot, garnished with green onions.
Notes
For an extra creamy texture, use an immersion blender to purée part of the soup. Adjust seasoning to taste.
