Ingredients

Scale
  • 1 pound Italian sausage
  • 1/2 pound bacon, diced
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 2 large potatoes, sliced
  • 2 cups kale, chopped
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. In a large pot, cook Italian sausage and bacon over medium heat until browned.
  2. Add diced onions and minced garlic, sautéing until onions are translucent.
  3. Pour in chicken broth and bring to a boil.
  4. Add sliced potatoes and simmer until tender.
  5. Fold in chopped kale and cook until wilted.
  6. Stir in heavy cream and season with salt, pepper, and red pepper flakes if desired.
  7. Serve hot with crusty bread.

Notes

For a thicker soup, mash a portion of the potatoes before adding cream. Leftover soup can be refrigerated for up to three days or frozen for later use.
