Ingredients

- 1 pound Italian sausage
- 1/2 pound bacon, diced
- 1 onion, diced
- 4 cloves garlic, minced
- 4 cups chicken broth
- 2 large potatoes, sliced
- 2 cups kale, chopped
- 1 cup heavy cream
- Salt and pepper to taste
- Red pepper flakes (optional)
Instructions
- In a large pot, cook Italian sausage and bacon over medium heat until browned.
- Add diced onions and minced garlic, sautéing until onions are translucent.
- Pour in chicken broth and bring to a boil.
- Add sliced potatoes and simmer until tender.
- Fold in chopped kale and cook until wilted.
- Stir in heavy cream and season with salt, pepper, and red pepper flakes if desired.
- Serve hot with crusty bread.
Notes
For a thicker soup, mash a portion of the potatoes before adding cream. Leftover soup can be refrigerated for up to three days or frozen for later use.
