- 2 cups vegetable broth or water
- 1 cup cherry tomatoes, halved
- 1 bell pepper, diced
- 1 small onion, chopped
- 2–3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Parmesan cheese, for serving
- Fresh basil, for garnish
Instructions
- In a large pot, combine pasta, vegetable broth, cherry tomatoes, bell pepper, onion, garlic, and Italian seasoning.
- Bring to a boil over medium-high heat.
- Reduce heat to medium, cover, and simmer for 10-12 minutes, stirring occasionally, until the pasta is cooked and the liquid is mostly absorbed.
- Season with salt and pepper to taste.
- Serve with grated Parmesan cheese and garnish with fresh basil.
