Ingredients

  • 8 oz pasta (penne or rotini)
  • 2 cups vegetable broth or water
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, diced
  • 1 small onion, chopped
  • 23 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese, for serving
  • Fresh basil, for garnish

Instructions

  1. In a large pot, combine pasta, vegetable broth, cherry tomatoes, bell pepper, onion, garlic, and Italian seasoning.
  2. Bring to a boil over medium-high heat.
  3. Reduce heat to medium, cover, and simmer for 10-12 minutes, stirring occasionally, until the pasta is cooked and the liquid is mostly absorbed.
  4. Season with salt and pepper to taste.
