Instructions
- In a large pot, heat olive oil over medium heat.
- Add the sliced sausage, onion, and bell pepper; sauté until softened.
- Stir in garlic, paprika, salt, and pepper; cook for 1 minute.
- Add the rice and stir to coat.
- Pour in the chicken broth and diced tomatoes.
- Bring to a boil, then reduce heat to low and cover.
- Simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
- Fluff with a fork and serve warm.
