Ingredients

  • – 3 1/3 cups (400g) all purpose flour
  • – 1 1/2 tsp (7.5g) salt
  • – 2 tsp (10g) baking soda
  • – 1 1/2 tsp (7.5g) ground cinnamon
  • – 1/2 tsp (2.5g) ground nutmeg
  • – 1/4 tsp (1.25g) ground allspice
  • – 1/4 tsp (1.25g) ground ginger
  • – 2 cups (400g) granulated sugar
  • – 1/2 cup (100g) brown sugar
  • – 1 cup (240ml) vegetable oil
  • – 4 eggs, large
  • – 1 15oz can (425g) pumpkin puree (not pumpkin pie filling)
  • – 2/3 cup (160ml) water
  • – 1 tsp (5ml) vanilla extract
  • – 1/2 cup (115g) butter, cold and cubed
  • – 1/2 cup (100g) brown sugar
  • – 3/4 cup (90g) all purpose flour
  • – 1 tsp (5g) ground cinnamon

Instructions

  1. Heat your oven to 350°F and prepare two 8×4 bread tins by greasing them (lining the bottom with parchment paper and using baking spray works well).
  2. In a big bowl, combine flour, salt, baking soda, cinnamon, nutmeg, allspice, and ginger.
  3. Stir in both the granulated and brown sugars until they are well mixed.
  4. Create a well in the center of the dry mix and pour in the oil, stirring just until it’s integrated (the mixture will still be dry).
  5. Incorporate the eggs, two at a time, being sure to mix after each addition—it will still appear dry.
  6. Mix in the pumpkin puree, water, and vanilla extract, ensuring everything is well blended.
  7. Evenly distribute the mixture into the prepared bread tins and set them aside.
  8. In a different bowl, blend together flour, brown sugar, and cinnamon for the topping.
  9. Use a fork or pastry cutter to cut in the butter until the mix looks like coarse crumbs.
  10. Evenly distribute the crumb topping over the batter in both pans.
  11. Bake for 55 to 65 minutes, checking with a cake tester for doneness. If the top browns too quickly, cover with foil.
  12. Let the loaves cool for 10 minutes before carefully removing them from the pans and placing them on a wire rack to cool completely.
  13. Cut into slices, serve, and enjoy!
