  • 1 c. vegetable oil (240 ml)
  • 3 large eggs
  • 1/2 tsp (3 ml). vanilla extract
  • 3 c. all-purpose flour (360 g)
  • 2 tsp (10 ml). baking soda
  • 1 tsp (5 ml). ground cinnamon
  • 1 1/2 tsp (8 ml). pumpkin pie spice
  • 1/2 tsp (3 ml). salt
  • 1 (15-oz.) can pumpkin puree
  • Nonstick cooking spray with flour
  • 1 14-oz. can sweetened condensed coconut milk
  • 1 c. packed light brown sugar (220 g)
  • 2 tbsp (30 ml). salted butter
  • 1/4 tsp (1 ml). vanilla extract

Instructions

  1. Set your oven to 350°F to preheat.
  2. In a big bowl, blend the sugar and oil until well combined. Add the eggs one by one, whisking thoroughly after each addition. Stir in the vanilla.
  3. In another bowl, mix together the flour, baking soda, cinnamon, pumpkin pie spice, and salt. Gradually incorporate this dry mixture into the wet ingredients in three parts, alternating with the pumpkin puree. Ensure the batter is smooth after each addition.
  4. Coat a 12-cup Bundt pan with nonstick spray that contains flour, then transfer the batter into the pan. Place a folded kitchen towel on the counter and firmly tap the pan on the towel 8 to 10 times to eliminate air bubbles. Bake for 60 to 65 minutes, or until a toothpick inserted in the center emerges clean. Allow it to cool in the pan for 10 minutes, then invert it onto a wire rack to cool completely.
  5. For the caramel glaze: In a medium-sized saucepan, combine the condensed milk and sugar. Cook over medium-low heat while stirring continuously until it reaches a boil. Lower the heat and let it simmer, stirring often, until the sugar dissolves and the mixture thickens, about 5 to 7 minutes. Remove from heat and mix in the butter and vanilla. Allow it to cool for 6 to 10 minutes, stirring regularly. The glaze is ready when it forms thick ribbons upon drizzling. Pour it over the cake and let it cool completely before slicing.
