- 2 cups water
- 2 packs ramen noodles (no seasoning)
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1-inch piece of ginger, peeled and grated
- 2 tablespoons soy sauce
- 1 tablespoon miso paste (white or yellow)
- 1 teaspoon rice vinegar
- 1 tablespoon chili paste (optional)
- 2 boiled eggs
- ½ cup sliced mushrooms (shiitake or button)
- 1 cup baby spinach
- ½ cup corn kernels
- 1 green onion (scallion), sliced
- ½ cup cooked chicken breast or tofu
- Sesame seeds (optional, for garnish)
- Seaweed sheets (optional)
- Chili flakes (optional)
- Coriander or cilantro (optional)
- Lime wedges (for serving)
Instructions
- In a large pot, combine the low-sodium chicken or vegetable broth and water. Over medium heat, mix in sesame oil, minced garlic, grated ginger, soy sauce, and miso paste. Stir well until the miso dissolves completely and let it simmer.
- Add the ramen noodles to the pot and cook according to package instructions, about 3-4 minutes, stirring occasionally.
- While the noodles cook, prepare your toppings: slice boiled eggs, mushrooms, and green onions.
- Remove the pot from heat, ladle the broth over the cooked noodles in serving bowls, and top with sliced mushrooms, spinach, corn, and halved boiled eggs. Garnish with green onions, sesame seeds, seaweed, and fresh herbs. Drizzle with rice vinegar or squeeze lime before serving.
Notes
For added flavor, customize the soup by adding your favorite veggies and experiment with different types of miso.
