Description
A comforting soup featuring chicken sausage, spinach, and tender tortellini in a flavorful broth.
Ingredients

- 3 tbsp olive oil
- 1 15 oz can of tomato sauce
- 1 48 oz chicken broth + 1 8 oz chicken broth
- 2 14.5 oz cans of fire-roasted tomatoes
- 1 15 oz white cannellini beans (drained & rinsed)
- 2 8 oz packages of cheese or spinach tortellini
- 8 chicken sausage links (cut into rings about 1/8 inch thick)
- 1/2 yellow onion (diced)
- 3 garlic cloves (minced)
- 1 cup spinach (chopped)
- 1 1/2 tsp basil
- 2 tsp salt
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp Chile Con Carne Seasoning or equivalent spices
- 1 tbsp arrowroot powder
- 2 tbsp warm water
- 1/2 cup half & half
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and minced garlic, sauté for 3-4 minutes until translucent.
- Add sliced chicken sausages, cook for an additional few minutes.
- Sprinkle in cumin, basil, and salt, combining well.
- Stir in tomato sauce, fire-roasted tomatoes, chicken broth, remaining basil, garlic powder, onion powder, and Chile Con Carne seasoning, and bring to a boil.
- Cover and reduce heat to simmer for 1-3 hours.
- Add tortellini and return to a boil for about 5 minutes.
- Switch to low heat, incorporate half & half, spinach, and cannellini beans.
- Mix arrowroot powder with warm water, add to the soup, and stir until thickened (1-2 minutes).
- Let it simmer on low until ready to serve.
Notes
Allowing the soup to sit overnight in the fridge enhances flavors. Adjust seasoning to taste when reheating.
