Ingredients

  • 4 roma tomatoes, halved
  • 2 carrots, peeled and halved
  • 1 red bell pepper, quartered
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 zucchinis, sliced
  • 2 tablespoons olive oil
  • 4 cups water
  • 1 teaspoon dried basil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/2 cup milk or coconut milk (optional)
  • Fresh basil leaves for garnish

Instructions

  1. Wash and prepare all vegetables: halve the roma tomatoes, peel and halve the carrots, cut the red bell pepper into quarters, and slice the zucchinis. Chop the onions and separate the garlic bulbs.
  2. In a large pot, heat olive oil over medium heat. Sauté onions and garlic until fragrant.
  3. Add the carrots, red bell pepper, and zucchinis to the pot, cooking for a few minutes until they start to soften.
  4. Add the halved roma tomatoes, dried herbs, and a sprinkle of salt and pepper. Stir to combine.
  5. Pour in the boiling water and bring the soup to a boil. Reduce heat and let simmer for about 20 minutes.
  6. Check the tenderness of vegetables. For a silky texture, blend the soup until smooth. Stir in milk or coconut milk, if desired.
  7. Serve hot, garnished with fresh basil leaves and a drizzle of olive oil.

Notes

Consider roasting the vegetables for richer flavor. Experiment with seasonal vegetables for different variations.
