Ingredients

- 4 roma tomatoes, halved
- 2 carrots, peeled and halved
- 1 red bell pepper, quartered
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 zucchinis, sliced
- 2 tablespoons olive oil
- 4 cups water
- 1 teaspoon dried basil
- 1 teaspoon Italian seasoning
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1/2 cup milk or coconut milk (optional)
- Fresh basil leaves for garnish
Instructions
- Wash and prepare all vegetables: halve the roma tomatoes, peel and halve the carrots, cut the red bell pepper into quarters, and slice the zucchinis. Chop the onions and separate the garlic bulbs.
- In a large pot, heat olive oil over medium heat. Sauté onions and garlic until fragrant.
- Add the carrots, red bell pepper, and zucchinis to the pot, cooking for a few minutes until they start to soften.
- Add the halved roma tomatoes, dried herbs, and a sprinkle of salt and pepper. Stir to combine.
- Pour in the boiling water and bring the soup to a boil. Reduce heat and let simmer for about 20 minutes.
- Check the tenderness of vegetables. For a silky texture, blend the soup until smooth. Stir in milk or coconut milk, if desired.
- Serve hot, garnished with fresh basil leaves and a drizzle of olive oil.
Notes
Consider roasting the vegetables for richer flavor. Experiment with seasonal vegetables for different variations.
