A delicious and nutritious vegan quiche made with tofu, fresh spinach, and nutritional yeast, perfect for brunch or a quick meal.


Ingredients

  • 1 block of firm tofu
  • 1 cup fresh spinach, chopped
  • 1/4 cup nutritional yeast
  • 1/4 cup almond milk
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • 1 pre-made pie crust or graham cracker crust

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté the onion and garlic until soft.
  3. In a bowl, crumble the tofu and mix in nutritional yeast, almond milk, turmeric, and season with salt and pepper.
  4. Add the sautéed onion and garlic and chopped spinach to the tofu mixture and stir well.
  5. Pour the mixture into the pie crust and smooth the top.
  6. Bake in the preheated oven for 30-35 minutes until firm and golden.
  7. Allow to cool slightly before slicing and serving.

Notes

Consider adding herbs like oregano or basil for extra flavor. Experiment with different vegetables such as bell peppers or mushrooms.
