A delicious and nutritious vegan quiche made with tofu, fresh spinach, and nutritional yeast, perfect for brunch or a quick meal.
Ingredients

- 1 block of firm tofu
- 1 cup fresh spinach, chopped
- 1/4 cup nutritional yeast
- 1/4 cup almond milk
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon turmeric
- Salt and pepper to taste
- 1 pre-made pie crust or graham cracker crust
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté the onion and garlic until soft.
- In a bowl, crumble the tofu and mix in nutritional yeast, almond milk, turmeric, and season with salt and pepper.
- Add the sautéed onion and garlic and chopped spinach to the tofu mixture and stir well.
- Pour the mixture into the pie crust and smooth the top.
- Bake in the preheated oven for 30-35 minutes until firm and golden.
- Allow to cool slightly before slicing and serving.
Notes
Consider adding herbs like oregano or basil for extra flavor. Experiment with different vegetables such as bell peppers or mushrooms.
