- 2 leveled cups (250g) all-purpose flour or light spelt flour
- 1/2 cup (100g) white or unrefined cane sugar
- 1/2 scant cup (approximately 80g) vegetable oil
- 2 eggs, at room temperature
- 2 tsp baking powder
- 1/2 tsp vanilla essence
- Zest from 1–2 lemons
- A pinch of salt
- 3 tbsp apricot or orange jam (for glazing)
Instructions
- Preheat your oven to 350°F (180°C) and grease a 9x5x2.5 inch loaf pan.
- In a large mixing bowl, whisk the eggs with sugar until blended.
- Add vegetable oil, lemon zest, and vanilla essence; mix until combined.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- Scrape the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 35-40 minutes, checking for doneness with a skewer.
- Allow the cake to cool on a wire rack before glazing with warm apricot or orange jam.
Notes
For extra flavor, consider adding fresh fruit or spices to the batter. Dust with powdered sugar for a beautiful presentation.
