  • 2 leveled cups (250g) all-purpose flour or light spelt flour
  • 1/2 cup (100g) white or unrefined cane sugar
  • 1/2 scant cup (approximately 80g) vegetable oil
  • 2 eggs, at room temperature
  • 2 tsp baking powder
  • 1/2 tsp vanilla essence
  • Zest from 12 lemons
  • A pinch of salt
  • 3 tbsp apricot or orange jam (for glazing)

Instructions

  1. Preheat your oven to 350°F (180°C) and grease a 9x5x2.5 inch loaf pan.
  2. In a large mixing bowl, whisk the eggs with sugar until blended.
  3. Add vegetable oil, lemon zest, and vanilla essence; mix until combined.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
  6. Scrape the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake for 35-40 minutes, checking for doneness with a skewer.
  8. Allow the cake to cool on a wire rack before glazing with warm apricot or orange jam.

Notes

For extra flavor, consider adding fresh fruit or spices to the batter. Dust with powdered sugar for a beautiful presentation.
