- 3/4 teaspoon (4 ml) salt
- 1/4 cup (60 ml) all-purpose flour
- 1/4 cup (60 ml) grated non-dairy cheese
- 1 large egg, beaten
- 2 cloves garlic, minced
- salt and ground black pepper to taste
- 2 tablespoons (30 ml) olive oil
Instructions
- Combine the grated zucchini with salt in a big colander and set it in the sink to let it drain for 10 minutes.
- Move the zucchini to the center of a cheesecloth, wrap it up, and squeeze out as much liquid as possible.
- In a large bowl, combine flour, non-dairy cheese, beaten egg, and minced garlic. Add the zucchini and season with salt and black pepper.
- Warm olive oil in a large frying pan over medium-high heat.
- In batches, place spoonfuls of the zucchini mix into the hot pan and cook until they are golden, about 2 minutes on each side.
- Serve immediately and enjoy!
