Ingredients

  • – 2 cups (480 ml) shredded zucchini
  • – 1/4 tsp (1.25 ml) Salt
  • – 3 large eggs, beaten
  • – 1/2 cup (60 g) all-purpose flour, see notes
  • – 1/3 cup (40 g) shredded cheese
  • – 1/3 cup (80 ml) pizza or marinara sauce
  • – 1 cup (120 g) shredded mozzarella cheese
  • – 12 slices beef pepperoni

Instructions

  1. Set your oven to 350°F to preheat.
  2. Distribute the grated zucchini evenly on a lightly oiled baking tray and sprinkle a small amount of salt over it. Bake for 15 minutes, then take it out and move the zucchini onto paper towels or cheesecloth.
  3. Raise the oven temperature to 450°F.
  4. Press out as much excess water from the zucchini as you can. Combine the zucchini with the beaten eggs in a large mixing bowl.
  5. Gradually add in the flour while stirring to blend. Keep incorporating flour until the mixture reaches the preferred consistency. (For all-purpose flour, I use the full ½ cup.)
  6. Spread the mixture onto a lightly oiled 12-inch pizza pan, leaving about an inch of space around the perimeter. Use a fork to make small holes in the dough to stop the crust from puffing up while baking.
  7. Sprinkle shredded cheese over the top and bake for 18 minutes, until it starts to gain a light golden color. Remove from the oven.
  8. Lower the oven temperature to 400°F.
  9. Allow the crust to cool if you prefer a crispier texture.
  10. Add pizza or marinara sauce, mozzarella cheese, and beef pepperoni (or other toppings of your choice) on top. Bake for 10 minutes, until the cheese becomes bubbly and melted.
  11. Garnish with parsley, red pepper flakes, or additional grated cheese before serving!

  • Squeeze out excess water from shredded zucchini for a crispier crust.
  • Experiment with different cheeses like cheddar or parmesan for extra flavor.
