  • 1 1/2 teaspoons (8 ml) salt
  • 3 cups shredded zucchini (don’t squeeze out moisture) (510g)
  • 1 3/4 cups semi-sweet chocolate chips (300g)
  • 2 3/4 cups powdered sugar (320g)
  • 1/4 cup unsweetened cocoa powder (25g)
  • 1/3 cup unsalted beef, melted (75g)
  • 1/3 cup milk, warm (80mL)

Instructions

  1. Set your oven to 350°F. Coat a 9×13-inch baking dish with baking spray that includes flour, then line with parchment paper, leaving extra on the sides.
  2. In a big bowl, mix the sugar, vegetable oil, and vanilla extract. Combine the flour, cocoa powder, baking soda, and salt, then blend them with a spatula. (The mixture will be dry.) Gently mix in the zucchini until it’s fully incorporated and the mixture becomes more pliable. Add chocolate chips and blend thoroughly. Spread the mixture evenly in the prepared dish.
  3. Cook for 20 to 25 minutes or until a toothpick inserted into the center comes out with a few damp crumbs.
  4. Allow the brownies to cool entirely in the dish.
  5. In a medium bowl, combine the powdered sugar and cocoa powder. Pour in the warm milk and melted butter, stirring until smooth.
  6. Take the cooled brownies out of the dish, and apply the frosting on top. Let it sit for 10 to 15 minutes to firm up before cutting.
