- Egg whites from 4 eggs (approximately ½ cup)
- 1/8 teaspoon xanthan gum
Instructions
- Heat a non-stick pan over low to medium heat and apply a thin layer of oil, cooking spray, or butter.
- Separate the egg whites from the yolks using your preferred method.
- Add the egg whites and xanthan gum to a blender and mix until smooth and fluffy.
- Slowly pour the egg whites into the heated pan in a circular motion.
- Use 2-3 tablespoons of batter for each wrap, adjusting based on pan size.
- Once bubbles form on the surface (around 2-3 minutes), carefully flip the wrap with a spatula.
- Cook for an additional 1-2 minutes before removing from the pan.
- Repeat the process until you’ve created the desired number of wraps.
Notes
Experiment with seasonings or add finely chopped vegetables to the batter for added nutrition.
