Ingredients

- – 1/2 cup (120 ml) apple juice
- – 1/3 cup (80 ml) coconut cream
- – 1/4 teaspoon (1 ml) nutmeg

Instructions
- ▢ Set your oven to a temperature of 375 degrees.
- ▢ Use foil to cover an 8″x8″ glass baking dish, ensuring it lines the sides for easy removal of the cheesecake.
- ▢ Mix together the gingersnap crumbs and melted butter, then press this mixture firmly into the base of the dish. Bake for 10 minutes, take out, and let it cool.
- ▢ Lower the oven heat to 325 degrees.
- ▢ In a mixing bowl, blend the cream cheese and sugar until the texture is smooth. Add the eggs one by one, mixing well after each addition. Incorporate the apple juice, coconut cream, and nutmeg, and continue mixing until the texture becomes creamy and smooth.
- ▢ Pour the creamy mixture over the cooled crust. Bake in the oven that has been preheated for 40 to 45 minutes, or until the center is firm. Take it out of the oven and let it cool on the counter for 30 minutes. Then, refrigerate for an additional 2 hours before cutting into bars.
