Ingredients

Scale
  • 1 3/4 cups (350 ml) gingersnap crumbs
  • 3 Tbsp (45 ml) light brown sugar
  • 1/4 tsp (1.25 g) ground ginger
  • 4 Tbsp (60 g) unsalted butter, melted
  • 2 cups (480 ml) full-fat eggnog
  • 1/4 cup (50 g) granulated sugar
  • 3 Tbsp (24 g) cornstarch
  • 2 large eggs
  • 2 additional egg yolks
  • 1/2 tsp (2.5 g) nutmeg, plus more for garnishing
  • 1/4 tsp (1.5 g) salt
  • 2 Tbsp (30 g) unsalted butter
  • 2 tsp (10 ml) vanilla extract
  • {optional} 2 Tbsp (30 ml) fruit juice (replace rum or bourbon)
  • 1 8-oz. (225 g) container whipped topping, slightly thawed
  • 1 cup (200 ml) gingersnap crumbs

Instructions

  1. Set your oven to 350°F to preheat.
  2. Use a food processor or mini-chopper to grind the gingersnaps into a fine texture. In a medium-sized bowl, mix together the gingersnap crumbs, brown sugar, ginger, and melted butter until everything is well combined.
  3. Lightly grease a 9-inch pie pan with butter. Evenly spread the crust mixture across the bottom and up the sides of the pan. (Hint: Using a flat-bottomed glass can help press the crust down evenly.)
  4. Put the crust in the oven for 10 minutes to bake, then take it out and allow it to cool.
  5. In a medium saucepan, combine the eggnog, granulated sugar, cornstarch, eggs, extra egg yolks, nutmeg, and salt, whisking until well mixed.
  6. Heat the mixture over medium heat, stirring frequently, for 5 to 10 minutes, or until it thickens and starts to boil. Remove from the heat, then add butter, vanilla, and optional fruit juice.
  7. Pour the thickened mixture into the cooled crust.
  8. Cover the top of the filling with plastic wrap and place in the refrigerator for a minimum of 4 hours.
  9. Take the pie out of the refrigerator and spread the whipped topping over the surface.
  10. Prior to serving, sprinkle gingersnap crumbs over the top as a garnish.

Notes

  • Consider using homemade gingersnap crumbs for a richer flavor.
  • Ensure a smooth filling by whisking the ingredients thoroughly while heating.
  • Add a unique twist by experimenting with different fruit juices.
