- 1 3/4 cups (350 ml) gingersnap crumbs
- 3 Tbsp (45 ml) light brown sugar
- 1/4 tsp (1.25 g) ground ginger
- 4 Tbsp (60 g) unsalted butter, melted
- 2 cups (480 ml) full-fat eggnog
- 1/4 cup (50 g) granulated sugar
- 3 Tbsp (24 g) cornstarch
- 2 large eggs
- 2 additional egg yolks
- 1/2 tsp (2.5 g) nutmeg, plus more for garnishing
- 1/4 tsp (1.5 g) salt
- 2 Tbsp (30 g) unsalted butter
- 2 tsp (10 ml) vanilla extract
- {optional} 2 Tbsp (30 ml) fruit juice (replace rum or bourbon)
- 1 8-oz. (225 g) container whipped topping, slightly thawed
- 1 cup (200 ml) gingersnap crumbs
Instructions
- Set your oven to 350°F to preheat.
- Use a food processor or mini-chopper to grind the gingersnaps into a fine texture. In a medium-sized bowl, mix together the gingersnap crumbs, brown sugar, ginger, and melted butter until everything is well combined.
- Lightly grease a 9-inch pie pan with butter. Evenly spread the crust mixture across the bottom and up the sides of the pan. (Hint: Using a flat-bottomed glass can help press the crust down evenly.)
- Put the crust in the oven for 10 minutes to bake, then take it out and allow it to cool.
- In a medium saucepan, combine the eggnog, granulated sugar, cornstarch, eggs, extra egg yolks, nutmeg, and salt, whisking until well mixed.
- Heat the mixture over medium heat, stirring frequently, for 5 to 10 minutes, or until it thickens and starts to boil. Remove from the heat, then add butter, vanilla, and optional fruit juice.
- Pour the thickened mixture into the cooled crust.
- Cover the top of the filling with plastic wrap and place in the refrigerator for a minimum of 4 hours.
- Take the pie out of the refrigerator and spread the whipped topping over the surface.
- Prior to serving, sprinkle gingersnap crumbs over the top as a garnish.
