  • 1/2 teaspoon (3 ml) baking powder (2 grams)
  • 1/2 teaspoon (3 ml) salt (3 grams)
  • 1 teaspoon (5 ml) ground cinnamon (2 grams)
  • 1/2 cup (120 ml) unsalted butter, melted (115 grams)
  • 1/2 cup (120 ml) vegetable oil (120 milliliters)
  • 1 cup (240 ml) granulated sugar (200 grams)
  • 1/2 cup (120 ml) brown sugar, packed (100 grams)
  • 2 large eggs
  • 1 teaspoon (5 ml) vanilla extract (5 milliliters)
  • 2 cups (480 ml) grated zucchini, packed (about 2 medium zucchinis)
  • 1 cup (240 ml) dairy-free chocolate chips (175 grams)
  • 1/2 cup (120 ml) dairy-free sour cream (120 milliliters)
  • 1 cup (240 ml) dairy-free shredded cheese (115 grams)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×5 inch loaf pan with butter or non-stick spray.
  3. In a large bowl, whisk together the flour, cocoa powder, baking soda, baking powder, salt, and cinnamon.
  4. In another bowl, mix the melted butter, vegetable oil, granulated sugar, and brown sugar until well combined.
  5. Add the eggs and vanilla extract to the wet ingredients, mixing until smooth.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  7. Fold in the grated zucchini, ensuring it is evenly distributed.
  8. Stir in the semi-sweet chocolate chips.
  9. Gently fold in the sour cream and shredded cheddar cheese until just incorporated.
  10. Pour the batter into the prepared loaf pan, spreading it evenly.
  11. Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
  12. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Grate the zucchini finely for even distribution in the bread.
  • Opt for high-quality dairy-free chocolate chips for optimal flavor.
  • Avoid overmixing the batter after adding dry ingredients for a tender texture.
