Scale
  • 1 1/2 cups (360 ml) all-purpose flour (180 grams)
  • 1/2 cup (120 ml) unsweetened cocoa powder (45 grams)
  • 1 teaspoon (5 ml) baking powder (4 grams)
  • 1/2 teaspoon (3 ml) baking soda (2 grams)
  • 1/2 teaspoon (3 ml) salt (3 grams)
  • 1/2 teaspoon (3 ml) ground cinnamon (1 gram)
  • 2 large eggs
  • 1 cup (240 ml) granulated sugar (200 grams)
  • 1/2 cup (120 ml) vegetable oil (120 milliliters)
  • 1/2 cup (120 ml) yogurt or non-dairy sour cream (120 grams)
  • 1 teaspoon (5 ml) vanilla extract (5 milliliters)
  • 1 1/2 cups (360 ml) shredded zucchini, squeezed dry (about 1 medium zucchini, 225 grams)
  • 3/4 cup (180 ml) dairy-free chocolate chips (130 grams)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×5-inch loaf pan or line it with parchment paper.
  3. In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, salt, and cinnamon.
  4. In another bowl, beat the eggs and add the granulated sugar; mix until well combined.
  5. Stir in the vegetable oil, sour cream, and vanilla extract into the egg mixture.
  6. Add the wet ingredients to the dry ingredients, mixing until just combined.
  7. Fold in the shredded zucchini and chocolate chips until evenly distributed.
  8. Pour the batter into the prepared loaf pan and spread evenly.
  9. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow the bread to cool in the pan for 10 minutes.
  11. Remove the bread from the pan and let it cool completely on a wire rack.
  12. Slice and serve once cooled.

Notes

  • Squeeze out excess moisture from zucchini to prevent a soggy bread texture.
  • Substitute with non-dairy sour cream for a dairy-free alternative.
  • Use a toothpick to check for doneness before removing from the oven.
