Ingredients

Scale
  • 4 large flour tortillas (10-inch)
  • 2 cups cooked chicken breast, shredded
  • 1½ cups Mexican cheese blend, shredded
  • ½ cup Monterey Jack cheese, shredded
  • 1 medium bell pepper, diced
  • ½ medium red onion, finely diced
  • 2 tablespoons olive oil or butter
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Mix the shredded chicken with chili powder, cumin, garlic powder, salt, and pepper.
  2. Lay a tortilla flat and sprinkle half of the Mexican cheese blend on one half.
  3. Add a layer of seasoned chicken, followed by diced vegetables and a sprinkle of Monterey Jack cheese.
  4. Finish with the remaining Mexican cheese and fold the tortilla over.
  5. Heat oil in a skillet over medium heat and cook the quesadilla for 3-4 minutes on each side until golden brown and crispy.
