- 16 oz farfalle pasta
- 2 chicken breasts
- 1 whole head of garlic
- 2 cups heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
- Olive oil
- Salt and pepper
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F. Cut top off garlic head, drizzle with olive oil, wrap in foil, and roast for 30-40 minutes until soft and golden.
- Season chicken breasts with salt and pepper. Grill or pan-sear until internal temperature reaches 165°F, about 6-7 minutes per side.
- Cook farfalle pasta in salted water according to package instructions until al dente. Drain and set aside.
- In a large skillet, squeeze roasted garlic cloves and sauté with heavy cream. Add Parmesan cheese and stir until sauce thickens.
- Slice chicken, add to sauce with pasta and spinach. Toss until spinach wilts. Garnish with fresh parsley and serve hot.
