  • 2 chicken breasts
  • 1 whole head of garlic
  • 2 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Olive oil
  • Salt and pepper
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F. Cut top off garlic head, drizzle with olive oil, wrap in foil, and roast for 30-40 minutes until soft and golden.
  2. Season chicken breasts with salt and pepper. Grill or pan-sear until internal temperature reaches 165°F, about 6-7 minutes per side.
  3. Cook farfalle pasta in salted water according to package instructions until al dente. Drain and set aside.
  4. In a large skillet, squeeze roasted garlic cloves and sauté with heavy cream. Add Parmesan cheese and stir until sauce thickens.
  5. Slice chicken, add to sauce with pasta and spinach. Toss until spinach wilts. Garnish with fresh parsley and serve hot.
