Ingredients

- 2 filet mignon steaks
- Salt and pepper, to taste
- 1 tbsp olive oil
- 2 tbsp butter
- 1/2 cup heavy cream
- 1/4 cup beef broth
- 1 tbsp Dijon mustard
- 1 tbsp black peppercorns, crushed
- Fresh parsley, chopped for garnish
Instructions
- Season the filet mignon steaks with salt and pepper on both sides.
- Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat.
- Sear the steaks for about 3-4 minutes on each side for medium-rare. Adjust based on your preferred doneness.
- Remove from the skillet and let them rest while preparing the sauce.
- In the same skillet, melt the remaining 1 tablespoon of butter over medium heat.
- Add crushed peppercorns and sauté for about 30 seconds until fragrant.
- Stir in Dijon mustard, beef broth, and heavy cream; bring to a simmer.
- Cook the sauce for 3-4 minutes until it thickens slightly.
- Season with salt to taste.
Notes
For a thicker sauce, let it simmer longer. Experiment with fresh herbs for added flavor.
