Ingredients

  • 2 filet mignon steaks
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1/2 cup heavy cream
  • 1/4 cup beef broth
  • 1 tbsp Dijon mustard
  • 1 tbsp black peppercorns, crushed
  • Fresh parsley, chopped for garnish

Instructions

  1. Season the filet mignon steaks with salt and pepper on both sides.
  2. Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat.
  3. Sear the steaks for about 3-4 minutes on each side for medium-rare. Adjust based on your preferred doneness.
  4. Remove from the skillet and let them rest while preparing the sauce.
  5. In the same skillet, melt the remaining 1 tablespoon of butter over medium heat.
  6. Add crushed peppercorns and sauté for about 30 seconds until fragrant.
  7. Stir in Dijon mustard, beef broth, and heavy cream; bring to a simmer.
  8. Cook the sauce for 3-4 minutes until it thickens slightly.
  9. Season with salt to taste.

Notes

For a thicker sauce, let it simmer longer. Experiment with fresh herbs for added flavor.
