Ingredients

  • – 2 cups grated zucchini, packed (2 medium zucchinis, 380g / 13 oz grated)
  • – 3/4 tsp (4 ml) salt
  • – 8 slices beef cheese (200g / 6.5 oz)
  • – 1 1/4 cups / 315 ml milk (any, I use low fat)
  • – 1/4 cup / 45 g melted butter, unsalted
  • – 2 tbsp (30 ml) vegetable oil (or other neutral flavored oil)
  • – 2 eggs
  • – 2 small garlic cloves, crushed
  • – 1 tsp (5 ml) white vinegar
  • – 2 1/4 cups / 335 g plain / all purpose flour
  • – 2 tsp (10 ml) baking powder
  • – 1/2 tsp (3 ml) baking soda (bi-carb)
  • – 1/2 tsp (3 ml) salt

Instructions

  1. Utilize a standard box grater to shred the zucchini. Take 2 cups of it, put it in a bowl, sprinkle with salt, and use your fingers to mix it. Let it sit for 20 minutes.
  2. Squeeze out excess moisture by hand and transfer the zucchini to a bowl. Set it aside.
  3. Set your oven to preheat at 180°C / 350°F for all types of ovens.
  4. Grease and line a loaf pan.
  5. Combine the dry ingredients in a bowl and whisk them together.
  6. In a separate bowl, mix the wet ingredients using a whisk.
  7. Create a hollow in the middle of the dry mixture. Pour in the wet mixture and stir quickly until the flour is mixed in.
  8. Quickly fold in the zucchini.
  9. Spread one-third of the mixture into the loaf pan. Layer with 4 slices of cheese.
  10. Add more batter, then place another 4 slices of cheese on top, and finish with the remaining batter. Smooth the surface.
  11. Bake for 50 minutes or until a skewer inserted in the center emerges clean.
  12. Optionally, brush the top with some melted butter.
  13. Let it cool in the pan for 10 minutes, then move it to a rack to cool further. Allow it to cool for at least 20 minutes before slicing.
  14. Store in a container, taking note of the warning for humid conditions.
