- 2 eggs
- 1/2 cup (120 ml) oats, ground
- 1/2 tsp (3 ml) baking soda
- 1 1/2 tsp (8 ml) coconut sugar
- Pinch of salt
- 1 tbsp (15 ml) vanilla sugar or 1 tsp (5 ml) vanilla & some honey
Instructions
- If you haven’t done so already, use a blender or grinder to turn the oats into a fine powder.
- Whisk the yogurt together with the baking soda in a bowl using a fork for a couple of minutes until the texture becomes airy and cloud-like.
- Incorporate the eggs into this mixture to achieve a more fluid consistency.
- Proceed by adding the coconut sugar, vanilla sugar or vanilla and honey, ground oats, and a dash of salt; blend thoroughly.
- Lightly coat a skillet with coconut oil and start cooking the pancakes, ensuring each is about the size of your palm.
- If your skillet is large and you’re cooking several pancakes at once, make sure to leave enough space between them for easy flipping.
- Once bubbles form on the surface or the edges appear set, use a spatula to turn them over quickly.
- Serve immediately, either plain or with a bit of butter; they are delicious as is, but you can also top them with fresh fruit, jam, honey, or chocolate if desired.
