  • 1/2 tsp (3 ml) baking soda
  • 1 1/2 tsp (8 ml) coconut sugar
  • Pinch of salt
  • 1 tbsp (15 ml) vanilla sugar or 1 tsp (5 ml) vanilla & some honey

Instructions

  1. If you haven’t done so already, use a blender or grinder to turn the oats into a fine powder.
  2. Whisk the yogurt together with the baking soda in a bowl using a fork for a couple of minutes until the texture becomes airy and cloud-like.
  3. Incorporate the eggs into this mixture to achieve a more fluid consistency.
  4. Proceed by adding the coconut sugar, vanilla sugar or vanilla and honey, ground oats, and a dash of salt; blend thoroughly.
  5. Lightly coat a skillet with coconut oil and start cooking the pancakes, ensuring each is about the size of your palm.
  6. If your skillet is large and you’re cooking several pancakes at once, make sure to leave enough space between them for easy flipping.
  7. Once bubbles form on the surface or the edges appear set, use a spatula to turn them over quickly.
  8. Serve immediately, either plain or with a bit of butter; they are delicious as is, but you can also top them with fresh fruit, jam, honey, or chocolate if desired.
