- 2 tablespoon (30 ml) s granulated white sugar
- 1 1/2 teaspoon (8 ml) s baking powder (NOT “baking soda” or “bicarbonate of soda”) See Note 1 for fluffier pancakes
- Pinch salt
- 2/3 cup (160 ml) (160 mls) whole milk
- 1 large egg at room temperature
- 2 tablespoon (30 ml) s (30 grams) melted unsalted butter
- Extra butter for cooking
Instructions
- In a mixing bowl, blend together the all purpose flour, granulated sugar, baking powder, and a pinch of salt.
- In another container, combine the whole milk, large egg, and melted unsalted butter, whisking them well.
- Mix the wet ingredients into the dry ones, stirring until they are just incorporated. If the mixture seems too thick, add a bit more milk.
- Warm a non-stick frying pan or griddle on medium-low heat. Lightly coat it with butter, using just enough to avoid burning.
- Spoon 2-3 teaspoons of the batter onto the heated surface, ensuring each mini pancake is no larger than 2 inches or 5 cm.
- Allow them to cook for approximately 45 seconds, waiting for bubbles to appear and burst on the top. Flip and cook the other side until it reaches a golden hue, similar to the first side.
- Transfer the cooked pancakes to a plate and keep them warm as you continue with the remaining batter.
