Ingredients

- 2 tsp baking powder
- Pinch of salt
- 2 tbsp white sugar
- 3/4 cup milk (adjust as necessary)
- 1 large egg, beaten
- 2 tbsp unsalted butter, melted
- 1 tsp pure vanilla extract
- Canola oil (or any neutral vegetable oil) for cooking
Instructions
- Combine the sifted flour, baking powder, salt, and sugar in a mixing bowl.
- In a separate bowl, mix together the beaten egg, milk, vanilla extract, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined, leaving some lumps.
- Set the batter aside for about 10 minutes to rest.
- While waiting, heat your non-stick skillet and coat it lightly with oil.
- Scoop the batter onto the skillet using a 1/4 cup measure.
- Cook until the edges look bubbly and the bottom is golden brown, then flip and cook the other side until golden brown as well.
- Serve hot and enjoy!
Notes
For fluffiest results, use fresh baking powder and gently mix the batter to avoid tough pancakes.
