Ingredients

Instructions

  1. Combine the sifted flour, baking powder, salt, and sugar in a mixing bowl.
  2. In a separate bowl, mix together the beaten egg, milk, vanilla extract, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir gently until just combined, leaving some lumps.
  4. Set the batter aside for about 10 minutes to rest.
  5. While waiting, heat your non-stick skillet and coat it lightly with oil.
  6. Scoop the batter onto the skillet using a 1/4 cup measure.
  7. Cook until the edges look bubbly and the bottom is golden brown, then flip and cook the other side until golden brown as well.
