  • – 1 1/4 cups (300 ml) whole milk
  • – 1/2 cup plain Greek yogurt (120g)
  • – 2 eggs, beaten
  • – 2 tablespoons (30 ml) vegetable oil, melted and cooled
  • – 2 teaspoons (10 ml) vanilla extract
  • – 1 tablespoon (15 ml) lemon zest
  • – 1-2 tablespoons (23 ml) maple syrup or honey (optional), see note
  • – 1 cup (240 ml) chopped strawberries

Instructions

  1. If you wish to maintain the warmth of your waffles, set your oven to 200°F.
  2. In a large mixing bowl, blend all the dry components until they are uniformly combined. In another bowl, whisk together the wet elements.
  3. Merge the wet mixture with the dry one. Carefully incorporate the strawberries, ensuring you do not overmix. Allow the batter to rest for approximately 5 minutes.
  4. Heat up your waffle maker. Apply a layer of oil by brushing or spraying it on. Pour in about 1/4 cup of batter (adjust according to the size of your waffle maker) and cook following the manufacturer’s instructions until they are golden brown. For the mini waffle maker suggested here, a cooking time of 2 minutes and 45 seconds was ideal!
  5. To keep the waffles warm as you continue cooking the remaining batter, you can place them on a baking tray in the oven if you wish.

Notes

  • Consider using 1 cup whole milk and 1/4 cup buttermilk for a lighter waffle texture.
  • Add a pinch of nutmeg or cardamom to enhance the flavor profile.
