- 2 lbs beef short ribs
- 3 large yellow onions, thinly sliced
- 6 cups beef broth (preferably homemade)
- 2 tsp fresh thyme leaves
- 2 bay leaves
- 4 slices sourdough bread
- 1 cup Gruyère cheese, shredded
- 2 tbsp unsalted butter
- Salt and pepper to taste
Instructions
- Prepare your ingredients by slicing the onions and cutting the beef short ribs into manageable pieces.
- In a large pot, melt the butter over medium heat. Add the sliced onions and cook for about 30 minutes until they turn a lovely golden brown.
- Push the onions aside and add the short ribs. Sear them until browned on all sides, about 5 to 7 minutes.
- Pour in the beef broth, then toss in the fresh thyme and bay leaves. Bring to a gentle boil, then reduce the heat. Let simmer uncovered for about 120 minutes.
- Preheat the oven to 350°F (175°C).
- Ladle the soup into oven-safe bowls, topping each with a slice of sourdough and a generous handful of Gruyère cheese.
- Bake for 15 to 20 minutes, or until the cheese is bubbly and golden.
Notes
Allow the soup to rest for 15 minutes after cooking to let the flavors meld.
