A rich and hearty stew made with tender beef, caramelized onions, and topped with Gruyere cheese and crusty bread.

- 2 pounds beef chuck, cut into cubes
- 4 cups beef broth
- 2 large onions, thinly sliced
- 3 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 cup Gruyere cheese, shredded
- 4 slices of crusty bread
Instructions
- In a large pot, heat the olive oil over medium heat. Add the sliced onions and cook until caramelized, about 20-30 minutes, stirring occasionally.
- Season the beef with salt and pepper, then add it to the pot with the onions. Brown the beef on all sides.
- Stir in the garlic, Worcestershire sauce, thyme, and bay leaf.
- Pour in the beef broth and bring to a boil. Reduce the heat and let it simmer for 90-120 minutes, or until the beef is tender.
- Preheat the oven to 350°F (175°C).
- Ladle the stew into bowls, top each with a slice of bread, and sprinkle with Gruyere cheese.
- Place the bowls on a baking sheet and bake in the oven until the cheese is bubbly, about 10 minutes.
- Serve hot.
Notes
For best results, take your time caramelizing the onions. Adjust seasonings throughout the cooking process for optimal flavor balance.
