- 1 lb ground beef (80/20 lean/fat)
- 2 large yellow onions, thinly sliced
- 1 cup white long-grain rice (uncooked)
- 1 can (10.5 oz) Campbell’s cream of mushroom soup
- 1 cup beef broth
- 1 cup shredded sharp cheddar cheese
- 2 tablespoons butter
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
Instructions
- Preheat your oven to 375°F (190°C).
- Brown the ground beef in a large skillet over medium heat for 5-7 minutes until no longer pink, breaking it up as it cooks.
- Drain most of the fat, leaving about a tablespoon in the skillet.
- Lower the heat to medium-low and add butter and sliced onions to the skillet. Cook, stirring occasionally, for 10-15 minutes until the onions are golden-brown and sweet.
- Add the uncooked rice, cream of mushroom soup, beef broth, salt, pepper, and garlic powder into the skillet. Stir well to combine everything.
- Pour the mixture into a greased 9×13-inch baking dish and cover it tightly with aluminum foil. Bake for 25 minutes.
- Remove the casserole from the oven, take off the foil, and sprinkle shredded cheddar cheese evenly over the top.
- Return to the oven, uncovered, and bake for another 10 minutes until the cheese is melted and bubbly. Optionally, broil for 1-2 minutes for golden spots (watch carefully).
- Let the casserole sit for 5 minutes before serving.
Notes
For added depth, consider incorporating fresh herbs like thyme or parsley. This casserole pairs well with a crisp salad or steamed vegetables.
