Description
A rich and hearty French onion soup made with tender short ribs and caramelized onions, topped with crusty bread and melted gruyere cheese.
Ingredients

- 2–3 lbs beef short ribs
- 4–5 large yellow onions, thinly sliced
- 8 cups beef broth
- 1 cup red wine
- 4 cloves garlic, minced
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1 French baguette, sliced
- 2 cups gruyere cheese, grated
- Fresh thyme sprigs
- Salt and pepper to taste
Instructions
- Season short ribs with salt and pepper, then brown in oil until golden on all sides.
- Remove ribs and add butter to the pot. Add sliced onions and cook slowly until deeply caramelized, about 45 minutes.
- Add garlic and cook until fragrant.
- Return ribs to pot, add wine and broth. Simmer until meat is fork-tender and falling off the bone (2-3 hours).
- Remove bones and shred meat.
- Top with toasted baguette slices and melted gruyere cheese.
Notes
- Can be made in advance and reheated before serving.
- Substitute gruyere with Swiss, Emmental, Comté, or provolone if needed.
- For slow cooker: Cook on low 6-8 hours or high 4-5 hours.
- Use yellow onions for best caramelization results.
- Choose crusty bread that will hold up in the soup.
