Ingredients

  • 23 lbs beef short ribs
  • 45 large yellow onions, thinly sliced
  • 8 cups beef broth
  • 1 cup red wine
  • 4 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 French baguette, sliced
  • 2 cups gruyere cheese, grated
  • Fresh thyme sprigs
  • Salt and pepper to taste

Instructions

  1. Season short ribs with salt and pepper, then brown in oil until golden on all sides.
  2. Remove ribs and add butter to the pot. Add sliced onions and cook slowly until deeply caramelized, about 45 minutes.
  3. Add garlic and cook until fragrant.
  4. Return ribs to pot, add wine and broth. Simmer until meat is fork-tender and falling off the bone (2-3 hours).
  5. Remove bones and shred meat.
  6. Top with toasted baguette slices and melted gruyere cheese.

Notes

  • Can be made in advance and reheated before serving.
  • Substitute gruyere with Swiss, Emmental, Comté, or provolone if needed.
  • For slow cooker: Cook on low 6-8 hours or high 4-5 hours.
